Use whatever works for you, man. An OS is just a tool, there’s no point in struggling with it. I don’t generally play games (apart from some UT’99 match), so Linux suits me perfectly. It’s ok to use something else, if your use case is different.

I think regular sync is encrypted in transit, not sure if at rest. Anyway, they have a clear privacy policy. I didn’t bother with encryption, as I have mostly non-sensitive and extremely boring work stuff there.
I’m not sure if vault (for wich Koof itself has an app by on f-droid, btw) allows for continuous sync.
I’ve been using Koofr since… 2019, I guess? No problems with it. Support if quite responsive as well. I also use a managed Nextcloud instance on Hetzner (Storage Share), 1 TB for some 5 euros/month. It works fine. Both should work fine for you. Anyway, Koofr offers 10 GB for free. Just try it for a bit and decide if it’s ok for you.
